Japanese Dinner at our hotel
“Kyo-kaiseki“–It is an artistic Japanese cuisine being arranged in a mixture of Japanese traditional way and in an original way of Kyoto. A traditional Japanese dinner course we serve here is arranged in a style of Kyoto.
We use foods that are in season for our Kyo-kaiseki dinner course. The seasonable foods are also flavored in Kyoto style.
Some fresh fish and meat in season we use are such as “ayu fish“, and “wild boar“. We pick foods and change foods we use in our Kyo-kaiseki depending on the season we are in. These high quality foods bring out rich flavor to our Kyo-kaiseki course dinner.
Exquisite ingredients we use – Japan has four distinctive seasons within a year.
In our Kyo-kaiseki course menu, we use ingredients that we obtain from each season. These ingredients take as an important role in sophistication of the taste of Kyo-kaiseki.
Anyone who is to experience this Kyo-kaiseki dinner course is meant to experience the seasons of Japan!
What's more to a deliciousness of our dinner – What makes Japanese cuisine so delicious and special is the usage of secret soup called “Dashi”. The dinner you will have here is so fine because of not only the seasonable ingredients we use but also the usage of our secret soup called “Dashi”. Dashi also takes an important role in the traditional Japanese cuisine. It is a stock made with konbu (see weed kelp) and katsuobushi (dried bonito flakes).
Most of the dishes served as kaiseki course menu are cooked with the Dashi.
